Vinification

Ripened and left to partially dry on the wine, these hand-picked grapes are better exposed to sunlight and air circulation.
Harvested at the end of October, the mixture of Corvina and other local grape varieties gives the wine the body and structure of a traditional Valpolicella red.
The wine is then aged in tonneaux barrels for sixteen months.
